Effects of Solvent , pH and Salt on Water Vapor Permeability and Mechanical Properties of Sodium Caseinate Films

Abstract

|
Water vapor permeability (WVP) and mechanical properties (tensile strength (TS) and elongation (E)) were investigated on sodium caseinate films. Film solutions were made with different solvent systems, at different pHs, and with different salts. The films made with a mixed solvent of ethanol and water (3:2) showed the highest tensile strength among the films. The TS of films decreased as the solution pH increased. The TS of the film with salt was higher than that of film without salt. The trend for E of films with pH and salts were opposite to those for TS. The WVP of film prepared with pH 8 was the lowest among the films. WVP value of film without salt was lower than that of film with salt in a ethanol and water (3:2) mixed solvent.
